A Mesa dos Chefs. Além do restaurante no norte da França, Tournadre manteve por nove anos uma casa perto de Kobe, no Japão. A inspiração do menu (entre o Ocidente e Oriente) mostra a influência das duas culturas.
Em tempos em que muitos defendem o sal como pilar do sabor de um prato, as receitas deste chef se apoiaram nas especiarias, no doce e no ácido.
